Colorado is a beautiful state. There. I said it. I was able to get out there 2 times this past year to visit Denver and Boulder, go to the Winter Brew Fest, ski at Loveland, and eat lots of great food.
Boulder has this famous strip of shops and restaurants called Pearl Street. It is so cute and fun to explore. My boyfriend and I stumbled upon this restaurant called Tahona Tequila Bistro, and obviously the Texan in us came out and we had to check it out.
Pictured you will see Chilaquiles which is a classic Mexican dish. It is essentially a large bowl filled with tortilla chips, pork green chili, and cheese, finished with two eggs over easy & pico de gallo. Wowza.
I had the tacos because big taco girl over here. So also pictured is the Al Pastor Taco and the Chicken Mole Taco. The Al Pastor is also a classic and made up of crispy sautéed pork, pineapple, red onion, and cilantro. The Chicken Mole consisted of chicken thigh meat braised in Mexican spices, pickled red onion, cilantro, and queso fresco.
